Watermelon N’Ice Cream

Alright, I still haven’t fully come to term with the fact that Summer’s almost over. Keyword: ALMOST! We still have until September 22nd, people! So make this refreshing summery treat while you still can!! The kids love this n'ice cream after playing outside on a hot summer day. It's just as refreshing as popsicle, without all of the added sugar and chemicals. Also, how gorgeous does it look as an ice cream bowl?! You can totally just save some time and energy and use a regular bowl, but there's something oddly satisfying about eating out of an actual watermelon.

Watermelons are pretty much the mascot for the season of Summer, so naturally I’m obsessed. Watermelons are light, refreshing+super hydrating! Watermelon is made of over 90% water, so it’s seriously going to quench your thirst. Watermelon is also great for soothing sore muscles. Paired with the Vitamin C of Berry Bliss, this “ice cream” is actually great for immunity during the changing seasons. Watermelon isn’t overly sweet, and açai actually naturally has no sugar (isn’t that insane?!), so this “ice cream” is more refreshing rather than rich. It won’t weigh you down at all, and it will leave you buzzing with energy and hydrated to the max!

Gather This:

  • 2 frozen bananas
  • 1 C watermelon
  • ¼ C Sambazon açai sorbet
  • up 2 tbsp coconut water
  • 2 tbsp Berry Bliss

toppings: edible flowers, bee pollen, hemp seeds, dried fruit, etc.

Do This:

  1. Cut a watermelon in half. Scoop out 1 cup of watermelon. If you want to use the watermelon itself as a bowl like we did, then scoop out all of the red part.
  2. Add the remaining ingredients to the blender and BLEND!
  3. If the mixture isn't really blending, stop the blender and scrape down the part of the smoothie that is stuck on the sides of the blender. If your blender has a tamper. use that to help with blending. If it still isn't blending at all, add a little bit of coconut water in small incriments
  4. Pour the mixture into the emptied watermelon half and top with your favorite toppings!
