Superfood Fudge Pops

Superfood Fudge Pops

This is totally a clean-out-the-fridge recipe, which is ok--because that’s usually when genius strikes! I had just enough cold brew coffee left in the bottle that I couldn’t throw it away (we do NOT waste food at Philosophie HQ. Ever.), but not enough for a satisfying cup of coffee. I scanned my pantry and the Cacao Magic powder jumped out at me. Chocolate+coffee is a match made in heaven. In baked goods, mochas, ice cream...it’s always a winning combo. Coffee really brings out the richness of chocolate, making it a perfect pairing. I combined that with a few other ingredients lying around my kitchen to make magic! Now that it’s officially summer and the heat is on in LA, cool treats are a staple for my kids. Instead of giving them store-bought frozen treats filled with nasties and tons of added sugar, I like to make my own wholesome superfood-filled versions.

This recipe is super simple to make, and your kids will love you for it! I usually wouldn’t give my kids any caffeine (they have enough unbound energy as it is!), but the two tablespoons in the WHOLE recipe is really minimal per popsicle. The coconut milk makes it wonderfully creamy+the healthy fats give you lasting nourishment and energy. The vanilla whey is sweetened with stevia, so it gives the mixture lots of protein+natural sweetness from the vanilla and stevia. I added a little bit of our raw honey for a touch more sweetness, but you can add more or less to taste. I love the fudginess of the cacao in the refreshing form of a frozen popsicle. Delish!!

Gather This:

  • 1 can of full fat coconut milk
  • 1/2 cup Cacao Magic
  • 1/2 scoop vanilla whey protein powder
  • 1/4 avocado
  • 2 tbsp cold brew coffee
  • 1 tbsp Cacao Bee honey
  • 1 tsp cinnamon
  • 1/2 tsp pink sea salt

Do This:

  1. Blend all of the ingredients in a high-speed blender
  1. Pour the mixture into popsicle molds. If you don’t have popsicle molds you can always use an ice cube tray to make little frozen bites instead.
  1. Freeze overnight or for at least 3 hours
  1. To serve, gently pop the popsicles out of the mold. If you have difficulty getting them out, it helps to run them under some hot water first.
