Sophie's 6 Favorite Pumpkin Recipes
It’s almost Thanksgiving, gang! I’m counting down the days until I can sink my teeth into a gooey slice of my Persimmon Pumpkin Pie topped with a mountain of coconut whipped cream. Pumpkin Pie isn’t the only pumpkin recipe worth salivating over! This whole season is filled with tons of creative ways to use this seasonal ingredient. I absolutely love using pumpkin because it’s actually super beneficial and nutrient dense. Pumpkin pie gives it a bad rep, but it’s actually full of health! The carotenoids that give the squash their bright orange color is converted by the body into vitamin A, which promotes skin and eye health. One particular carotenoid that can be found in pumpkins, beta-carotene, is an antioxidant that has even been linked to a decreased risk of some cancers. Pumpkins are also full of digestion-friendly, hunger-curbing fiber as well as potassium, a vital mineral which can help balance electrolytes after an intense fitness sesh.

Persimmon+Pumpkin=BAE. End of story. I can’t believe it took me so long to get on the persimmon train, but I’m so glad that I finally did! Boosting this recipe with Philosophie Superfoods elevates this dessert to the next level. Both persimmons and coconut are incredibly high in fiber, which means that a small slice of pie was delightfully filling, and it’s hard to feel too bad about indulging in dessert when it’s packed with antioxidants and immunity boosting vitamin C from the Berry Bliss!

Pumpkins can actually curb hunger because of all of their fiber, making it easier to feel satisfied with less. I know I can’t control myself around baked goods, but these are truly satisfying and don’t leave you craving more!
4) Holiday Paleo Pumpkin Waffles
Holy yum! These are seriously EPIC! I mean, just look at that picture! This is probably my favorite breakfast to make for the kids. We make this yearround, since you can buy canned organic pumpkin all of the time! I usually make a huge batch of this on the weekends and then freeze half of it for quit and gourmet brekkys throughout the week! I absolutely love that the kids gobble up these protein-rich waffles! Plus, they’re full of tons of phytonutrients and green goodness from the spinach and Green Dream!
This is such a hearty and fulfilling dessert! You can think of this recipe as a pumpkin pie without the crust, and it is SO good. I love that it’s a cinch to whip up, lasts a good few days in the fridge + is, in my opinion, even more delicious cold.
After eating this pumpkin pie flavored smoothie, I felt totally full from all the fiber, and the sweetness satisfied my cravings without me feeling like I needed to eat a whole pumpkin pie. With regular desserts made with real sugar, dairy, and cream...there’s no stopping me! I seriously don’t feel full at all and continue to stuff my face and proceed to feel so uncomfortable later.
