Healthy, Tasty Spinach Chocolate Chip Muffins
We’re all about our GREENS! These sweet & tasty chocolate chip muffins are made with spinach, bananas, and our Green Dream Superfood Blend filled with tons of healing & mood-boosting superfoods like spirulina and maca. These spinach muffins are nutrient dense and full of yumminess, but the best part of all is that you don’t taste the spinach. Our tip is to just make sure your bananas are super ripe, that's the secret.
This recipe is so easy to make. Simply measure, then throw the ingredients in the blender, scoop into muffin liners & bake!
Makes: 10 muffins
Gather This:
2 ripe spotty bananas
2 pasture raised eggs
3 tbsp maple syrup
1 tbsp vanilla extract
2 cups packed spinach
⅓ cup dairy-free yogurt
1 cup almond flour
1 ¼ cup oats (optional to get gluten-free)
1 scoop of Green Dream
¼ cup flax
1 tbsp hemp hearts
2 tsp cinnamon
1 ½ tsp baking powder
½ tsp baking soda
¼ tsp salt
⅓ cup chocolate chips (+ for topping)
Do This:
Preheat the oven to 375 and line/spray your muffin pan. Blend all the wet ingredients first until smooth from the bananas to yogurt. Blend in the dry ingredients except the chocolate chips. When the batter is combined, fold in your chocolate chips then evenly distribute into the 10 muffin liners. Add chocolate chips to the top & bake for 22-25 min. Let cool for 5 min then transfer to wire-rack to be cooled completely. ENJOY!
