Healthy, Homemade Potato and Beet Chips

Who says snacking can’t be fun + healthy?! As a mama, I’m constantly on the look for fun + creative ways to involve my kiddos in the kitchen and making our own veggie chips is the perfect afternoon activity! As an added bonus, making homemade chips always you the flexibility to add your own seasonings like the Green Dream Savory Blend we used for added nutrients and avoids processed ingredients.

This recipe for homemade potato + beet chips could not be simpler and I’m in love with the seasonal flavors and colors this snack brings to the table! These are the perfect afternoon snacks and I love being able to show my boys how to bring more fun into the kitchen while teaching them the beauty of cooking with rich, nourishing foods like veggies!

Gather This:

4 medium beets

2 sweet potato

2 potatoes

1-2 tbsp avocado oil

1 tbsp Green Dream Savory Blend

Do This:

Preheat oven to 350 degrees. Slice beets and sweet potatoes into thin layers, about 1/8 of an inch (use a mandolin if possible). Spray all your slices with avocado oil or throw into a bowl and toss in oil. Evenly spread slices on a baking sheet (be sure they are not stacked on top of one another) and season with Green Dream Savory Blend. Bake for 30-40 minutes, flipping the chips halfway through. Remove when beets lighten in color. They will crisp up when cool. You can store these in an airtight container for up to a week!
