Green Gluten-free Pumpkin Waffles

I think we can agree that most mornings we crave carbs and heavy foods, which is why bagels are so popular. We’ve been “fasting” all night so our bodies are craving replenishment. I’m definitely a fan of gluten here and there but if you have it first thing in the morning you’ll more likely to hit a crash much earlier in the day than you would like. I believe that you DON’T have to sacrifice things that look good, taste good and make you feel good just because it's healthy for you. These nutrient-dense green gluten-free pumpkin waffles hit all three!


Pumpkin gets a bad rep during the holidays because of the recipes it’s used in but it’s actually a superfood. The carotenoids that give the squash their bright orange color are converted by the body into vitamin-A, which promotes skin and eye health. One particular carotenoid that can be found in pumpkins, beta-carotene, is an antioxidant that has even been linked to a decreased risk of some cancers. Pumpkins are also full of digestion-friendly, hunger-curbing fiber as well as potassium, a vital mineral that can help balance electrolytes after an intense fitness sesh.

This recipe is so fun to make with your kids or the next time you have your friends over for brunch! 

Gather This:

1 can organic pumpkin puree

5 large organic free-range eggs (or chia eggs)

1 tbsp Green Dream Superfood + Protein Blend

1 large handful of spinach

½ cup almond milk

½ cup coconut flour

¾ cup tapioca flour

1 tsp vanilla extract

½ tsp baking soda

½ tsp baking powder

2 tbsp coconut oil

1 tsp pink sea salt

1 tsp Fall Vibes Pumpkin Pie Superfood Blend

1 tbsp raw honey or sweetener of choice 

Do This:

Mix all ingredients into a high-speed blender. Add mixture to a pre-heated waffle iron + cook until crispy on the outside (cooking time will vary depending on your iron). Top with your favorite toppings of choice! We used strawberries, bee pollen, pomegranate and walnuts but it would taste amazing with maple syrup or anything else you’d like!
