Green Dream Curry
There’s nothing better than tucking into a nice bowl of SUPERFOOD comfort food! All of the comfort, none of the guilt! Thanks to all of the veggies, full fat coconut milk that will taste delicious and keep you satisfied, and the added power of Green Dream--this recipe will lift you up instead of weigh you down! Traditional curries contain lots of dairy and cream, but this one is a delicious and nutritious twist on the classic!
This is totally a clean-out-your-fridge recipe. All you need is some quality spices, coconut milk, and lots of veggies of course!! You can really swap out any of the veggies for your favorites. I also love adding a little bit of cubed tofu for an added punch of protein! Sweet potatoes are amazing in this dish because, well...SWEET POTATOES. Serve this over a bed of brown rice and garnish with some cilantro, and you have a cozy, yummy, and nutritious meal! This recipe is pretty hands off. All you have to do is make the curry sauce, and then you just have to wait for the veggies to absorb the delicious flavor in the crock pot. There’s not even a flame involved! This means that instead of standing there cooking, you can have your meal cook itself while you attempt to complete the other 800 things on your to-do list!!
Turmeric is the spice that gives curry its rich orange flavor. Not only does it stain all of your clothes and counter (we still love you anyway), but it actually is a superfood! Turmeric is amazing for reducing inflammation. Since inflammation is the root cause of all disease, this spice is essential! It’s really great for helping your muscles recover after a hard workout too!
Gather This:
- 4 cans coconut milk
- 3 sweet potatoes
- 1 parsnip
- 2 cups carrots
- 2 cups green beans
- 1 cup snap peas
- 1 medium white onion
- 3 small squash
- sea salt
- black pepper
- crushed garlic x 1 ½ teaspoons
- fresh ginger 1 inch chopped
- 1 tsp garam masala
- 2 tsp turmeric
- 1 tsp cumin
- Bragg's sea kelp seasoning
- curry leaves
- 1 tablespoon Green Dream Superfood + Protein Blend
Do This:
- Chop all of your veggies
- Add all ingredients (vegetables, milk, and spices) to a crock pot
- cook on high for approximately 4 hours.
- After your curry's cooked, add the Green Dream, serve up in your favorite bowl, and ENJOY!
