Fall Vibes Brûlée Bites
Can’t stop, won’t stop...holiday baking! These mini Fall Vibes Brûlée Bites are as yummy as they are cute! Made with a creamy pumpkin, Fall Vibes base and a gingersnap, cinnamon graham cracker crust, this delicious little treat is perfect for your upcoming holiday dinners or everyday snacking.
We topped these little beauties with our Fall Vibes Browned Butter Frosting making an explosion of warm autumn spices in your mouth. We’re not afraid of sweets around here. The trick is to make healthy substitutions where you can like sweetened condensed coconut milk instead of sweetened condensed whole milk and using our adaptogenic, superfood pumpkin spice blend, Fall Vibes, loaded with grounding herbs like tocos and ashwagandha instead of your average pumpkin spice.
It’s also acknowledging that your body does not hate sweets and does in fact crave it every once in a while and making these little pumpkin pies with so much love and intention only makes them taste all that much better. Gather This:
FOR THE CRUST
1 cup gingersnap cookie crumbs
1 cup cinnamon graham cracker crumbs
5 tbsp raw butter organic pastures
FOR THE FILLING
1 15ox can pumpkin puree
1 ¾ cups sweetened condensed coconut milk
2 eggs
1 ½ tsp Fall Vibes
Do This:
Preheat oven to 350. Using a rolling pin or food processor, pulverize the gingersnaps and graham crackers into little crumbs until you have about a cup of each. Pour them into a mixing bowl and combine.
Heat 5 tbsp of butter and pour over the crumbs. Mix until thoroughly combined with a spoon or your hands.
Grease a pan with butter, then pour your crumbs evenly into the pan. Distribute as evenly as you can across the pan then press down with a spatula. Bake in the oven for 10 minutes then remove.
Add pumpkin puree, 2 eggs, Fall Vibes, and condensed milk to a mixing bowl. Use a hand mixer to combine until smooth.
Pour the pumpkin mixture evenly over your crumb crust into the pan, and place in the oven for 55-60 minutes on the bottom rack. Remove and let cool for at least 4-6 hours in the refrigerator.
Once cool, use cookie cutters to create these little pumpkin brûlée bites and top with some fall vibes browned butter frosting! ENJOY!
