Easy Veggie Burger Kale Salad
Anyone else tired of having a salad for lunch and ending up STARVING two hours later? Same. Give us a salad that’s LOADED with delicious veggies, fruits, a rich protein-source and topped with a homemade Berry Bliss dressing to satisfy hunger and support your energy all day long!
In this salad, we used Dr. Prager’s California Veggie Burgers which includes 5g of protein and 10 different types of veggies. They’re so tasty and super satisfying. We also dressed it with a light and slightly sweet Berry Bliss dressing made from our Berry Bee Honey.

Gather This:
1 large bunch kale (leaves torn from stems)
1 cup tomatoes
½ cup dried cranberries
½ cup pine nuts
½ cup shredded carrots
¼ red onion (thinly sliced)
1 Dr. Praeger’s California Veggie Burger
FOR THE DRESSING
¼ cup apple cider vinegar
juice of 1 lemon
1 tbsp Berry Bee Honey
½ cup neutral oil (grapeseed, canola, etc)
salt and pepper to taste
Do This:
In a nonstick skillet, cook Dr. Praeger’s California Burger on each side for 5-7 minutes until golden brown. Chop burger into small pieces.
Make the dressing by whisking together all the ingredients with a fork.
Put the shredded kale in a large bowl with the salt. With your hands, squeeze and massage the kale and mix it well with salt. Keep massaging the kale for up to 3-5 minutes as the kale will darken, shrink in size and the fibers will break down. Once this happens, mix in all of the other ingredients into the bowl.
Assemble salad by tossing all ingredients with dressing.
