Chocolate Chip Blender Banana Bread
This delicious and hassle-free chocolate chip blender banana bread is packed with nutrient-rich ingredients and designed for convenience. This loaf is so EASY because you can just throw it all in the blender and then bake it! Easy peasy and packed with superfoods, nutrients and ingredients that will support you feeling your best.
Gather this:
Nonstick cooking spray (we used avocado)
3 ripe bananas, mashed (or use frozen and fully defrost) (about 1 cup/150g)
½ cup Cosmic Dream Honey or Berry Bee Honey
2 tbsp monkfruit
¾ cup olive oil
¼ cup sour cream or Greek yogurt
3 large eggs, at room temperature
1 tbsp vanilla extract
3 cups old-fashioned rolled oats (aka 5-minute oats)
2 tsp ground cinnamon
1 tbsp Green Dream
1 tsp baking soda
½ tsp sea salt
1 cup dark chocolate chips, plus a few extra for the top
Do this:
Preheat the oven to 350°F (175°C) and line a 9 by 5-inch (23 by 12 cm) loaf pan with parchment paper, crossing two strips to create an overhang on all 4 sides (so you have a sling to remove the loaf from the pan).
Spray the parchment paper with nonstick cooking spray.
Add the mashed bananas, superfood honey, Green Dream, olive oil, sour cream/yogurt, eggs, vanilla, oats, cinnamon, monkfruit, baking soda, and salt into a high-speed blender. Process until the oats are fully broken down and the mixture is smooth.
Remove the blender container from the machine, then carefully fold in the chocolate chips with a spatula.
Pour the batter into the prepared pan, then sprinkle a few extra chocolate chips on top.
Bake in the preheated oven for 55 to 60 minutes, or until a toothpick inserted in the center comes out clean. Allow the bread to cool in the pan for 10 minutes.
Use a knife to gently cut around the bread to make sure it doesn't stick to the sides of the pan. Turn the bread upside down onto your hand and place the bread bottom side down on a cooling rack.
