Quick-Glazed Green Beans with Almonds

Green beans cooked in coconut butter and paired with slivered almonds are simply divine. Together, the beans and almonds dish up a healthy serving of vitamin K, vitamin E, vitamin H, manganese, copper, and phytonutrients with antioxidant properties. Pair with grilled salmon or chicken and an ancient grain like amaranth for a balanced + delicious dinner!

Bring a pot of water to a rolling boiling, and carefully drop the green beans in. Let them cook for 1-2 minutes, or until they turn bright green. Immediately remove them from the heat, and transfer the beans into a bowl of ice water to stop the cooking process. Take them out of the bowl, and set them on paper towels to dry.

In a large pan, add the coconut butter and bring to a medium high heat. Add the onions, and cook until they start to soften (about 1-2 minutes). Then add the green beans and sauté for another 2-3 minutes. Reduce heat to medium low, add the honey, and a few pinches of salt.

Cook for another minute or so, making sure that all of the beans are coated and fork tender. Then transfer to a serving bowl or plate, and sprinkle with toasted almonds.
