Holiday Paleo Pumpkin Waffles

Holiday Paleo Pumpkin Waffles

Break out the waffle iron for these  gluten-free, paleo, vegetarian, + dairy-free Paleo Pumpkin Waffles!
I've added pumpkin to make this breakfast staple more filling and a wonderful post-workout meal! Plus, pumpkins pack in a bunch of other health benefits. The carotenoids that give the squash their bright orange color is converted by the body into vitamin A, which promotes skin and eye health. One particular carotenoid that can be found in pumpkins, beta-carotene, is an antioxidant that has even been linked to a decreased risk of some cancers. Pumpkins are also full of digestion-friendly, hunger-curbing fiber as well as potassium, a vital mineral which can help balance electrolytes after an intense fitness sesh.
