Come Halloween night, you'll probably be sinking your teeth into all sorts of tricks + treats—but if you'd like to make some frightfully delicious dishes that are packed with nutrients before dashing off to your Monster Ball or haunting the streets with your kiddies, try one of these 3 ABSOLUTELY AMAZING recipes from my beautiful friends McKel, from Nutrition Stripped, and Ksenia, from Breakfast Criminals

We got really into the spirit + dressed up their creations as a Vampire Smoothie Bowl, a Monster Mash Macrobiotic Bowl, and Zombie Zucchini Oats—read on to unmask this trio of recipes + discover what yummy superfoods are inside! 

Vampire Smoothie Bowl

This smoothie bowl contains the frozen puree of dragon fruit, frozen banana rich in potassium, frozen raspberries giving another kick of color and fiber while being low in sugar, a boost in healthy saturated fats from coconut milk and optional ingredients like a protein powder to keep this macronutrient balanced, bee pollen for added nutrition, maca for added minerals, superfood powders (this one is from my sweet friend and they taste amazing) and medicinal mushroom powders for added antioxidants- all of these powder ingredients are completely optional but I have them on hand and love popping them in here!

Gather This: 
  • 1 pack of frozen and pureed pink dragon fruit (pitaya)
  • ½ frozen banana
  • 1 cup frozen raspberries
  • 1 cup coconut milk
  • 1 teaspoon bee pollen
  • 1 teaspoon maca powder
  • 1 tablespoon Philosophie Berry Bliss Superfood + Protein Blend 
  • 1 teaspoon medicinal mushroom powders, optional
  • Garnish toppings, optional: shredded coconut, bee pollen, cacao nibs, fresh dragon fruit, fresh sliced figs, fresh raspberries, Maple Banana Nut Granola

Monster Mash Macrobiotic Bowl

This Brown Rice Miso Macro Bowl has been a life saver. It’s effortlessly balanced in fiber, carbohydrates, proteins, and healthy fats while taking less than 10 minutes to put together…yet it tastes like a meal you slaved over the stove for hours.

Gather This: 

  • 1 whole egg (optional)
  • 1-2 teaspoons sesame oil (or olive oil)
  • 1 clove garlic
  • ½ inch fresh ginger root
  • 3 cups arugula (or spinach), wilted
  • ¼ cup brown rice (or wild rice)
  • 1 tablespoon yellow or red miso paste
  • 1 small sweet potato, cubed and baked
  • 2 radishes, sliced
  • 1 roasted beet, sliced
  • 1 tablespoon pickled ginger
  • Philosophie Green Bee Honey (to drizzle on top!)

Zombie Zucchini Oats

Ever since seeing Nutrition Stripped’s zoats recipe, I’ve been obsessed with them! A combination of shredded zucchini and oats, zoats make an incredibly satisfying and nutrient-packed breakfast. Simply add grated zucchini to oats and cook them as you normally would, or take it to a whole new level with these creamy and incredibly satisfying chocolate pumpkin zoats. Vegetables have never tasted so good – you can’t even make them out in this creamy chocolate pudding of a meal! 

Gather This: 

  • 1 small zucchini
  • 1 cup almond milk (I love Califia brand)
  • 1/2 cup oats
  • 1/2 cup pumpkin puree (or 1/2 cup baked pumpkin, chopped in cubes)
  • 2 tbsp. raw cacao powder or Philosophie Cacao Magic Superfood + Protein Blend 
  • 2 tbsp. sweetener of your choice – I recommend brown rice syrup or honey
  • 1 tsp. pumpkin pie spice
