Mediterranean Earth Bowl Recipe

I LOVE creating earth bowls for lunch or dinner! They're so fun and easy to make simply gather your favorite grains, veggies, legumes/beans (or other choice of protein) and beautifully arrange everything in a bowl.

I've always been a fan of the fresh + flavorful ingredients of Mediterranean cooking so this week I decided to compose an earth bowl that celebrates the fusion of sun-dried tomatoes, chickpeas, red onion, Persian cucumber, basil, and oregano. You can get creative with your bowl and top it with anything else you like, from extra herbs to feta to avocado. And then be sure to snap a pic of your masterpiece!

Gather This:
Salad and Base
  • 1 cup cooked grain of choice (Quinoa, Brown Rice, Millet, etc.)
  • 1 tablespoon sun-dried tomatoes (chopped)
  • 1/3 cup chickpeas
  • 1/4 red onion, sliced
  • 1 Persian cucumber, cubed
  • roughly chopped fresh basil and oregano leaves (as much as needed)
Dressing
  • 1 clove chopped garlic
  • 1-2 tablespoons dijon
  • a squeeze of lemon
  • 1 teaspoon Green Dream Superfood + Protein Blend  
  • 1-2 tablespoons red wine vinegar (optional)
  • a touch of olive oil 
  • salt + pepper (season to taste) 

 

Do This:
Scoop your grain of choice into your favorite bowl to form the base. Then arrange your salad ingredients on top of the grains and drizzle on the dressing and any other additional toppings. ENJOY!
