Paleo Cacao Magic Cupcake Recipe

My kids love to help me in the kitchen, especially when they know that we will be making something as sweet and delicious as these paleo-friendly muffins. They think of them as “chocolate cupcakes”, which is just fine by me since I know that these sweet treats are full of healthy ingredients that are good for growing bodies. The coconut oil and coconut flour in this recipe make these muffins moist and filling, while the Manuka honey adds sweetness, as well as powerful anti-bacterial properties. A hearty helping of my special Cacao Magic Superfood + Protein Blend, which is packed with plant-based protein, healing reishi mushroom powder, and antioxidant-rich raw cacao powder, makes these muffins so nourishing that I don’t even have to keep track of how many my boys (or I) eat! 

 

Gather This:

  • 1/3 Cup virgin coconut oil 
  • 1/3 Cup Cacao Magic Superfood + Protein Blend 
  • 1/2 Cup coconut sugar
  • 1/2 Cup coconut flour
  • 4 large eggs, room temperature
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon sea salt

 

Do This:

Preheat oven to 350F. Line 24 cups of a mini muffin pan with mini paper liners. (I use reusable ones from Williams Sonoma, and I let Leo do this step since it's easy for a two year old.) 

In a small pot over low heat, whisk together the coconut oil, Cacao Magic and coconut sugar until melted and smooth. Transfer to a large mixing bowl and let sit for about 10 min.

In a separate small bowl, whisk together the coconut flour, baking soda, baking powder, and sea salt.

With an electric mixer or whisk, beat the eggs into the chocolate mixture until combined. While the mixer is running, gradually add the flour mixture and beat until fully combined.

Spoon about 1 tablespoon of batter into each muffin cup, spreading the tops to be smooth. This is Kai's favorite part and I let him take his time making sure each muffin tin has just the right amount of batter.

Bake for 13-15 min, or until a toothpick comes out clean. Cool completely, enjoy them as muffins or turn them into "cupcakes by adding some Cacao Magic Manuka honey (or any raw, high grade honey)  or some melted Philosophie Superfood Coconut Butter "frosting"! To make them extra fancy, garnish with little raspberries and IN JOY!

I love it when kids help in the kitchen. Too cute. I recently ordered your Cacao Magic Honey (I’ve already had the Berry Bliss version). Can’t wait to try it as a cupcake topping.

I only have a large 12 cup muffin tray…do you think I should bake them for the same amount of time? Trying these tonight. I hope the kids like them. I tried the pumpkin pancakes and my 5 year old had a total tantrum because they fell apart when he picked them up! I have to be careful with paleo recipes:) I make the pumpkin pancakes and waffles from Happy Healthy Life all the time…your kids would love them. Thanks for all the great recipes!
