Green Dream Zucchini Loaf Cake - paleo, grain-free, dairy-free!

This incredible paleo, superfood bread is packed with protein + healthy fats, is low in sugar + carbs, and when Green Dream Philosophie Superfood Powder is added, packs massive nutritional punch!  No need to start your day with a sugar-laden, simple carbohydrate breakfast that will cause a huge blood sugar spike only to result in the “3 PM slump”. Green Dream Zucchini Paleo Bread - Philosophie recipe

Green Dream Zucchini Loaf Cake (grain free,dairy free,paleo friendly) 
Gather:
  • ½ cup coconut flour
  • ¾ tsp baking soda
  • ¼ tsp salt
  • 1 Tbsp cinnamon
  • 2 Tbsp Green Dream Superfood Powder (options but STRONGLY recommended:)
  • 4 eggs (choose pasture-raised and local if possible)
  • 2-3 Tbsp. raw honey or Grade B maple syrup
  • 1 cup (1 small to medium) zucchini
  • ½ cup chopped walnuts (optional but recommended)
  • 1 banana
  • 1 Tbsp coconut oil- for greasing loaf pan

Tip: If you are looking for more of a dessert cake, I suggest adding more sweetener to the batter. I like to eat mine warmed and slathered with tahini and raw honey. 

Do This:
  1. Preheat your oven to 350 degrees
  2. Shred zucchini and squeeze out as much liquid as possible (using a nut-milk bag or placing in cheesecloth/tea towel and squeezing)
  3. In a large bowl, mix together; mashed banana, eggs, honey/maple syrup
  4. Add dry ingredients and zucchini to bowl and mix
  5. Stir in nuts
  6. Grease loaf pan (or line with parchment paper) and pour mixture into pan
  7. Bake for 45 mins or until knife comes out clean
