Paleo Green Dream Waffles

I've added pumpkin to make this breakfast staple more filling and a wonderful post-workout meal! Plus, pumpkins pack in a bunch of other health benefits. The carotenoids that give the squash their bright orange color is converted by the body into vitamin A, which promotes skin and eye health. One particular carotenoid that can be found in pumpkins, beta-carotene, is an antioxidant that has even been linked to a decreased risk of some cancers. Pumpkins are also full of digestion-friendly, hunger-curbing fiber as well as potassium, a vital mineral which can help balance electrolytes after an intense fitness sesh.

Gather This:
- 1 cup puréed pumpkin (organic canned)
- 1 tablespoon Green Dream Superfood + Protein Blend
- 2 big handfuls spinach
- 3 large eggs, room temperature (or chia eggs)
- 1 teaspoon vanilla extract
- 1 cup balanced almond flour
- 1/3 cup tapioca flour or starch
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon ground cinnamon
- 3 tablespoons maple syrup
- 2 tablespoons coconut oil
Do This:
Mix all ingredients into a high speed blender. Add mixture to a pre-heated waffle iron + cook until crispy on the outside (cooking time will vary depending on your iron). Top with pomegranate seeds + fresh berries and serve!
Tasty Tips:
- For chocolate waffles, add 3 tablespoons of Cacao Magic Superfood + Protein Blend.
- Add a dollap of coconut whipped cream for a taste of heaven!
- We love to freeze a bunch, then later defrost + toast them (you can also store in the fridge for up to 1 week).

This looks delicious! I use pumpkin in all my waffle recipes, and your green superfood would be the perfect addition! I’ve made my waffles with Cacao Magic and Berry Bliss before too! :)
