Sweet Potato + Avocado Toast Recipe
I had a serious avocado toast craving, like California Dreamin’ craving, but I wanted to mix it up as I always have a tendency to do. So instead of bread, I broke out my favorite gluten-free toast substitute - sweet potato!
This is such a quick and easy breakfast if you’re craving something warm and good ol’ avocado. Sweet potato cooks really nicely that will hold up even packed on with a ton of toppings. What I love most about mixing up my Toast Tuesday morning with sweet potatoes are all the extra nutrients you get! Sweet potatoes are high in Vitamin A, which is great for your eyes and helps strengthen your hair + nails. Combine all that with Philosophie superfoods, protein, and a healthy fat and you have a crazy good nutrient packed breakfast or snack.
Gather This:
1 Sweet Potato, roasted
½ cup Kite Hill Cream Cheese
1 Avocado, sliced
Everything But The Bagel seasoning (Trader Joe’s)
Handful of Sun-dried Tomatoes
Drizzle of Green Bee Honey
Do This:
Slice and roast sweet potato, spread some cream cheese on top. Load with one to two avocados, a little bit of sun-dried tomatoes, and a sprinkling of seasoning. Drizzle with Green Bee Honey. ENJOY!
