Spring Tomato Salad Recipe
Nothing beats a juicy, locally-grown tomato. You know you've found a good one when its sweet, sour, and savory components come together in a beautifully balanced medley. With the exception of bruschetta (which I LOVE!), this antioxidant and fiber-rich fruit rarely gets the spotlight in dishes, which is why I wanted to make this Spring Tomato Salad recipe. It's super simple–I pair an organic tomato with our Philosophie Pesto, sliced walnuts, and a sprinkling of Green Dream to let the tomato's amazing taste + texture really shine!
Gather This:
For the Pesto:
- 1 cup of basil
- ¾ cup cashews
- ½ cup pine nuts
- ¼ cup olive oil
- 1 clove of garlic
- 2 tablespoons water
- 1 tablespoon nutritional yeast
- 1 teaspoon Green Dream Superfood + Protein Blend
- 1 teaspoon garlic powder (optional)
- 1 teaspoon sea salt
For the Salad:
- walnuts, sliced
- 1 organic tomato
- 1 teaspoon Green Dream Superfood + Protein Blend
- salt + pepper (to taste)
Do This:
Combine all pesto ingredients in a blender on medium, until the texture is smooth. Slice tomato lengthwise. Stack one slice, spread on the pesto, and a sprinkle of chopped nuts. Repeat to make additional layers! Top with more sprinkled Green Dream and salt + pepper!
