Spiralized Veggie Rice Cracker Cake Recipe
I’m not afraid to tell people that I LOVE to snack. Philosophie smoothies, toast variations, savory foods, sweets, salty chips, anything and everything. I’m all about satisfying an afternoon snack attack, but it’s reaching for easy and nutrient-packed foods that my body will thank me for. Enter some super yum, veggie rice cracker cakes.
Take some rice cake (packed full of fiber + iron) and smother it in hummus (try HOPE hummus; available at most grocery stores) then top with some veggies of your choice (spiralize them for a flavor explosion). Finish it off with a sprinkle of Green Dream and you’ve got a delicious, nutritious snack to satisfy your tastebuds! It’ll give you the boost you need to go on about your day without a second glance in your pantry.
Gather This:
1 whole grain Rice Cracker Cake
2 tbsp Hummus
½ cup yellow Zucchini, spiralized
1 cucumber, sliced
Pinch of Paprika, Salt and Pepper
Pinch of Philosophie Green Dream
Do This:
Spread hummus on a rice cracker cake. Slice cucumber and put however many slices you desire on top of the hummus. Spiralize a zucchini in your spiralizer, or julienne peeler. Add ½ cup of the spiralize zucchini on top of the cucumber. Sprinkle with a pinch of paprika, salt and pepper. Finish with Green Dream!
