Hummus Spiralized Veggie Platter Recipe
Sometimes I don't really feel like making a “normal” dinner. All I want is veggies - both raw and roasted - compiled into a meal. If you like your spiralized zucchini sautéed, feel free to sautée them for 2-3 min over medium heat with 1 tsp coconut oil. Sometimes I want them sautéed, other times I like the refreshing raw crunch. It's a personal preference! We have a beet hummus recipe that's out of this world if you want to make your own, if not, we love Hope hummus and garlic majestic brands.
Gather This:
1 cup Hummus
1 Roasted Sweet Potato
1 Spiralized Zucchini + 1 Yellow Squash
Fried Banana
Handful of Organic Blueberries
1 handful of Kale
1 tsp Green Dream
Hemp Hearts
EVOO+Salt // Pepper
Do This:
Slice and Roast the sweet potato in the oven on 400 degrees for 20 minutes. While that roasts, spiritualize the vegetables and dress with Salt+Pepper. Slice a banana quarter size and fry in Coconut Oil, for 2 minutes on each side. Chop the kale and saute for 4 minutes in Coconut Oil. Spread out the hummus on the platter, layer the sweet potato, add on fried bananas, pile on the spiralized veggies, sprinkle the blueberries, kale, a drizzle of EVOO, Salt, Pepper and Green Dream!
