Heart of the Week: Green Dream Chia Seed Pudding

I’m always on the go, and sometimes, preparing morning meals is a struggle... so waking up and having a nutrient-dense and delicious breakfast waiting for me in the fridge is such a lifesaver! The best part about this recipe is that you can make giant batch at night, and then have breakfast sorted out for the rest of the week!

This pudding has a ton of superfood power, so even though it tastes like I treat, I know that it is still nourishing for my body. Chia seeds are incredible because they are nutritional all-stars- in fact, they are some of the most nutrient dense foods on the planet!! They are loaded with fiber, protein, Omega-3 fatty acids and various micronutrients... and when combined with Green Dream, you really have a really winning combo.

One of the most unique properties of Chia is its ability absorb up to 12 times its weight in water. So if you soak them in liquid, they expand and form a gelatinous pudding-like texture. I like to use full fat coconut milk for this recipe- it definitely keeps me feeling energized + satiated throughout the morning. Not to mention, it adds a delicious creamy texture.

I love this pudding so much, I once ate it for breakfast AND dinner in the same day. No judgements here, sometimes you just can't get enough of a good thing!
