Healthy Tips + a Simple Dish for the New Year, ELEVATED You

There’s some powerful + potent energy swirling around the first month of the year. So many opportunities to allow you to connect deeply with your true self. Many of us fixate on our health and body at the start of the year. It’s important that as you continue to work on your New Year’s intentions to remind yourself that you need to approach everything with love including loving yourself, deeply and wholly. That this process will never be about depletion or restriction but working with the beauty of food to create nutrient-dense meals that taste just as good as they are for your health and wellbeing.


I get so excited at the start of the new year because I feel so inspired to create. So much of my creative mind begins in the kitchen where I can make a clean and simple dish with a ton of plant-based food, superfoods and colors galore. I rely SO much on my Samsung refrigerator to keep my veggies fresh so I can grab them straight from the fridge and whip up some savory, herb-roasted veggies. The Samsung oven cooks veggies evenly and I can leave it to do other things. I’m all about time management in the kitchen!!

The new year is also a great time to get back to your meal-prep routine, I don’t meal prep every meal but I do like to make one large dish at the start of the week that can be used again in different ways. One of my favorites - especially in the winter months - is roasted sweet potatoes and carrots with a veggie cauliflower fried rice. Our Samsung oven with stove top makes it super easy to roast a large tray of carrots and sweet potatoes while cooking a good healthy portion of cauliflower rice with my favorite chopped veggies.


This dish is great to pack for lunch the next day or add as a side to a chicken or salmon dish. I get bored when I eat the same thing every day but starting with a good base allows you to build a meal with lots of nutrients and superfoods! I mix & match the herbs and spices I use which adds a different flavor to each dish I create. I also add plenty of superfoods to any dish I make like the Green Dream blend which enhances the savory qualities of a meal while also adding protein, vitamins and nutrients.


Cauliflower Fried Rice w/ Roasted Veggies

This recipe is so easy and makes a great meal-prep dish. It has so many good veggies and a healthy serving of Green Dream for energizing and detoxifying properties. ENJOY!


Gather This:

1 large head of cauliflower (or buy the cauliflower pre-riced)

Cut + cubbed veggies (I use greens, tomatoes and celery)

Large carrots (cut in half)

Sweet potato

1 tbsp Green Dream

Do This:

Cut your sweet potato and carrots and mix them with olive oil and any herbs + spices you’d like - I love adding Green Dream along with Himalayan pink salt and pepper. Arrange them on a large tray and roast them in the oven for 30 min. at 375°. While your veggies roast, make your cauliflower rice. Add a tbsp of olive oil to a pan and cook your chopped veggies and cauliflower rice on the stove for 5-7 minutes until the cauliflower is tender.
