Cacao Peppermint Truffles:
ingredients:
- 2 T to 1/2 C Cacao Magic (depending on how chocolatey you want them)
- 4 Medjool dates
- 1/2 C almond meal (I get it from trader joes–much cheaper than any other brand)
- 1-2 T Green Dream
- 4-5 drops chocolate stevia
- 4 T coconut oil
- 1 t peppermint extract (more if you want more)
- raw cacao nibs and/or unsweetened coconut flakes for coating
directions:
Melt your coconut oil so it’s completely liquid. In a food processor, mix the dates and almond meal. Then add half the coconut oil, green dream powder and cacao magic powder. Process til it’s not powdery; add a few drops of coconut oil if it is. Add the rest of the coconut oil, peppermint extract and stevia and process until it’s a smooth thick consistency. If it’s too powdery, add more coconut oil. When you get the desired consistency, take out of the food processor and put in a bowl. Here you can add any toppings you want- I usually do coconut shreds and/or cacao nibs or squish a few goji berries into the center.
Roll into balls and put into fridge over night or the freezer for one hour. Then pop them in your mouth for a delicious, healthy, superfood treat!
Cacao Magic Hazelnut Cake
ingredients (makes 5 2×3-inch frosted cakes):
- 2 C hazelnuts
- 1 C pitted dates
- 3/4 C Cacao Magic
- 1/2 C + 2 T maple syrup or agave, divided
- 1 medium ripe avocado
- Crushed hazelnuts for garnish
- Pulse the hazelnuts in a food processor until finely ground into a flour. Add in the dates, 1/2 C Cacao Magic powder, and 1/4 C maple syrup/agve and process until it forms into a thick dough that sticks together.
- Lay the dough out between two sheets of parchment paper and roll to about 3/4-inch thickness.
- With a sharp knife, cut the dough into either 8 or 10 equal sized rectangles. If there’s excess dough you can form it into a ball, roll it out, and cut again.
- Make the frosting by blending together the remaining maple syrup/agave, Cacao Magic powder, and the meat from the avocado until it’s uniform in color and texture. Taste it and adjust the sweetness if need be.
- Spread about 2 T of frosting over half of the cakes. Layer with another slice and spread an equal amount of frosting on top of that piece.
- Garnish with crushed hazelnuts.
Green Dreamin' Asparagus Soup
- bunch raw asparagus, ends trimmed
- 1 ripe avocado
- 1 T Green Dream
- 1C coconut water
- 1 cup raw cashews
- 1/4 c fresh dill
- Juice of one lemon (I used about 1/2 of a large one)
- 1 t tamari
- 2 cloves garlic
- 1/2 t fresh ground black pepper
- 1/2 t pink sea salt
- 1 ear fresh (raw) corn, kernels removed
Add all ingredients except the corn to blender. If it’s too much to fit at once, you can do it in two batches. Blend until smooth and/or desired texture. Top with fresh corn, a twist or two of black pepper and a sprinkling of sea salt.
"Cheesy" Kale Chips
- 1 large bunch of kale
- 1 C cashews (soaked 2 hours)
- 1 red bell pepper, seeded and chopped
- 3-4 T fresh squeezed lemon juice
- 1 T agave
- 2 T nutritional yeast
- 1 T Green Dream
- 1/4 t onion powder
- 1/4 t turmeric powder
- 1/2 t Himalayan sea salt
Rinse the kale and spin dry. Remove the stems and tear into bite size pieces. Let the kale air out as much as possible before coating. Blend the ingredients for the cheesy seasoning in the blender until smooth. Transfer kale and seasoning to a large bowl and mix well using your hands to ensure the leaves are well coated. Spread kale leaves out on a cookie sheet. Bake for 15 minutes, or until leaves are crisp when shaken in pan.
