Coconut Sorbet
This one’s nuts. Literally. Coco-nuts.
I have been on such a coconut kick lately… waters, milks, butters, flakes… I honestly don’t think a day goes by where I haven’t incorporated at least one variation of a coconut into a meal or snack. It’s such a versatile ingredient, and I absolutely love playing around with it in the kitchen.
Right now, I am totally addicted to this coconut sorbet. My sweet tooth is undeniable, and this recipe has just the right amount of naturally occurring sugars to satisfy my cravings without the crash or the guilt. It’s light + refreshing, but still has a creamy texture from the healthy fats…This definitely makes it feel luxurious, and in my opinion, a little luxury goes a long way!
Aside from the taste, I love how easy this sorbet is to make. 4 ingredients, 1 machine, and BOOM! Dessert! Recipes like this are super convenient because you don’t need a list or have to waste time gathering 20 things from your pantry or fridge. And if you’re always on the go, you can prepare this in a matter of minutes, pop it in the freezer, and have it ready when you come back home.
I like making a couple of batches at a time, using some as sorbet, and using the rest as a base for smoothies and shakes- it’s a great option to use as a thickener, and doubles as an awesome alternative for frozen bananas. My boys and I have been devouring this sorbet like crazy, and I’m pretty sure it’s going to have a permanent place in the Jaffe freezer for months to come!
