Creamy {dairy-free} Broccoli Soup
Gather:
- 1 T olive oil
- 1/2 onion chopped
- 2 cloves garlic chopped
- 1 leek chopped
- 3 C water
- 5 C broccoli (1 head)
- 1 T Green Dream Superfood + Protein Powder
- 1 C cashews soaked (3/4 cup dry turns into 1 cup soaked)
- 2 1/2 t salt
- 1/2 t pepper
Do This:
Sauté onion, garlic, and leek in olive oil in saucepan. When they appear tender add water, broccoli, salt + pepper. Simmer 8-10 minutes until broccoli is bright green and tender. Transfer to blender with cashews. Blend until smooth and then add green dream. If not using a high speed blender (like vitamix or blendtec) wait for soup to cool before blending or use an immersion blender.
