Pumpkin, Grain-free, Protein Cookies || Paleo + Superfood rich

One of the main reasons I get so excited for fall is PUMPKIN EVERYTHING! I add it to smoothies, muffins, oatmeal and, yes, even cookies.

I posted a picture last weekend while I was recipe testing on Instagram and I got a bunch of questions about the recipe so I thought I'd post here!  (hey, have we met on Instagram yet? If not, let’s–you can find me here).

 

This cookie is simple, using minimal ingredients + tons of nutrients. The add-in of Philosophie Superfoods adds protein, fiber + flavor. 2 of these with a smoothie would be the perfect breakfast, in my opinion! We had these for dessert the past few nights, but let's be real, this is better than any protein/energy bar you could possibly find in the grocery store! No guilt in grabbing a few of these with a fresh juice as an afternoon snack or as an evening snack with a glass of coconut or almond mylk! 

 

Gather: 

 

Do This:

▼ Preheat oven to 325 F.  Grease or spray your mini muffin pan with coconut oil. I love trader joes coconut oil spray!  {Side note:You can also use muffin cups in a tray. I actually made double of this recipe, so I got crazy, making muffins, cookies + small cake-like weird thing. Don't ask. Got crazy, you heard me.}

 

▼ Combine all ingredients in a bowl or high speed blender.  At the end, fold in chocolate chips.  I used some extra chips to garnish the tops - but that's completely optional!

 

▼ Bake for 15-20 minutes.  Do not over bake - they burn easily.

 

 :: Yields 21 mini muffins :: 

TIPS:  

 --> Pumpkin puree can be subbed with butternut squash puree.  

--> Almond butter can be subbed with creamy peanut butter or any type of nut butter.  And, as noted above, honey or maple syrup works - I've tried both and love them both ways!
